Portugal launched great explorations in the 15th and 16th century to explore the world beyond their shores, during Portuguese explorations they came across various spices that greatly influenced their national cuisines.
Grilled chicken with tomatoes is a Cabo Verdean dish with roots in Portugal. This dish has a sauce based on tomatoes. When being prepared, the peppers, onions, and garlic are put together in olive oil to create a nice smell that fills your environment with a wonderful aroma.
Tomatoes and saffron are added to the freshly-made mixture. The chicken is browned then slowly cooked. Then, the pan is deglazed with chicken stock and white wine before the other ingredients are combined.
